Battered Squid

This recipe is sometimes also called Calamares a la Romana or Rabas. It’s a dish similar to the Japanese »Tempura« (easy and quick to make) and you will – of course – find Calamares rebozados in many Mediterranean restaurants. In Spain it is served most of the time as Tapas in bars or restaurants. Along with it comes may come a salsa sauce (Tzatziki, mayonnaise, ketchup, garlic sauce). As all the other seafood you can serve it cold or hot, but with a little lemon it gains additional freshness.


Ingredients:

4 calamari or 1 ¼ lbs of calamari rings

2 eggs

1 cup of milk

1 cup of flour

1 lemon

1 laurel leaf

Oil and salt

Directions

Wash and cut the calamari. Give some oil into a bowl, add lemon juice and the laurel and let them stay like that for about half an hour.

Take the egg yolk and stir it with the flour in bowl. Add the milk and stir until you will have a nice, thick sauce. After the 30 minutes have passed take the calamari and give them to the paste. Now, you can fry them in a pan with hot oil until the rings get a golden color.

Tips

Beside potatoes and eggs, Tortilla contains onion. The potatoes should be well cocked and should rest afterwards for about half an hour in the already whisked eggs. After finishing, wait for 8-10 minutes before you serve it!
