1 cup coconut milk (I used carton) or other non-dairy milk
1/2 cup fresh mint
3 cup chopped pineapple (fresh or frozen)
2–4 cups baby spinach
2 lime, zest and juice
1 tsp freshly grated ginger
2 cup ice
Optional: Top with chia seeds, shredded coconut, hemp seeds etc…
