Air Fryer Chicken Nuggets with Smidgen Buffalo

INGREDIENTS 

2 boneless, skinless chicken breast (about 2/3 lb.)

1/4 tsp salt

2 Tbsp all-purpose flour

1 cup buttermilk or milk

2 cup plain breadcrumbs

3 tsp Smidgen Buffalo

4 Tbsp cooking oil

INSTRUCTIONS 

On a cutting board, cut the chicken breast into 3/4 inch pieces. You should get approximately 20-24 chicken nuggets depending on the size of your chicken breast.

Sprinkle ¼ tsp of salt evenly over the chicken pieces. Next sprinkle the flour over the chicken and toss to coat evenly.

In a small bowl add the breadcrumbs and Smidgen Buffalo. Mix seasoning into the breadcrumbs. Next add the cooking oil to the breadcrumbs and stir until the oil is evenly coating the breadcrumbs. It should look like damp sand.

In another small bowl add ½ cup buttermilk/milk.

Now line up the chicken, buttermilk/milk, and breadcrumbs. Using tongs or your hands, begin to coat the chicken nugget pieces by first dipping them in the buttermilk/milk, then transfer them to the breadcrumbs and coat them evenly with the breadcrumbs. Set the coated chicken pieces to the side.

Preheat the air fryer to 400°F. Once preheated, place the chicken nuggets in the air fryer basket in a single layer. Try not to overcrowd the basket. You can cook the chicken nuggets in 2 batches if needed. Air fry for 8 minutes, flipping the nuggets halfway through.

Remove chicken nuggets from the air fryer and let cool for 3-5 minutes, then serve with your favorite dipping sauce.

Smidgen Cheat Sheet - just a few ideas...

·   Barbecue – This sweet smoky blend is great on smoked pork shoulders, popcorn, and chicken.  It’s great on oyster crackers mixed with olive oil and put in the oven. 

·   Blackened – Blackened Chicken or Salmon – yum!  This blend is also great on cabbage steaks in the oven or on the grill as well as grilled corn. 

·   Buffalo – Buffalo Chicken Wings! Grilled street corn.

·   Chili Blend – You can make a great chili with this blend.

·   Coffee Rub – This is excellent on any red meat.  Hamburgers, Steaks, Ribs etc.  We use locally roasted coffee (Hangar 61 Coffee Co.).  This is Chad’s favorite on hamburgers. 

·   Game Blend – A blend for wild game! Deer, lamb, turkey etc. – Deer roast, this blend and a beer in the croc pot all day with some mushrooms and onions – yum!

·   Garlic & Herb – This is our 2nd most popular blend.  You can make a great marinade/paste with this adding red wine vinegar and oil then put that on cut up potatoes or chicken and air fry them.  Yum!

·       Italian Blend This came from Chad’s homemade pizzas – it’s great on chicken, roasted vegetables, spaghetti sauce, dressing…

·       Jamaican Jerk – This blend is great for Jerk Chicken.  It also goes well on a pork shoulder for a little spicy action.  A local restaurant (Pandora’s Pies) uses this on their chicken wings.

·       Pork Blend – Pork! This sweet, salty blend goes well with pork, potatoes, and chicken. 

·       Poultry BlendThis blend is excellent for chicken pies, chicken casseroles, dumplings etc. 

·       Pumpkin Spice All the pumpkin recipes!  Add to your coffee.  I will put it in my coffee filter with the coffee and brew it and then you get that great flavor without the gritty of the seasoning.  It goes well in protein shakes too!  Also good on sweet potatoes and French Toast. 

·       Ranch – You can make dressing, dip or sprinkle it dry on your vegetables.  We also use it with a beef roast in the crock pot adding little pepperoncini’s.

·       Seafood Blend – All seafood! Shrimp, salmon etc. – mix it with the Blackened to get a little spice.

·       Seasoned PepperThis is my (Sarah’s) 2nd favorite – I use this like I use regular pepper.  Any recipe that calls for pepper, I use this.  I sprinkle it on my salads, mac and cheese, eggs…everything. 

·       Seasoned SaltFrench fries! Our local steak house (Kimbers Steakhouse) uses this as their house blend on their steaks, wings, burgers, fries – it’s a great all-purpose blend.

·   SPG – This is my (Sarah’s) personal favorite.  I love it on pork chops, hamburgers, broccoli… it’s great for homemade chicken salad or pasta salad. 

·   Steak Blend – This is our most popular blend.  It’s obviously delicious on steaks and hamburgers but also great on grilled vegetables, chicken, EGGS…the list goes on and on…

·       Taco BlendTACOS!!! Probably the one that gets purchased in the large jars the most.  Everyone needs a good taco blend.
