1 lb ground pork
1 medium onion, finely chopped
3 cloves garlic, minced
1 medium carrot, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 cup green peas (frozen or fresh)
2 medium potatoes, diced
1 can (14 oz) tomato sauce
1/2 cup water
2 tablespoons cooking oil
1 teaspoon soy sauce
1 teaspoon fish sauce (optional)
Salt and pepper to taste
1 bay leaf (optional)
1/2 cup raisins (optional, for sweetness)
Instructions:
Heat the cooking oil in a large pan over medium heat.
Sauté the garlic and onion until the onion becomes translucent.
Add the ground pork and cook until it turns brown and crumbly. Break up any large chunks with a spoon.
Stir in the soy sauce and fish sauce (if using) and cook for a few minutes.
Add the diced carrots, potatoes, and bell peppers. Continue to sauté for about 5 minutes or until the vegetables start to soften.
Pour in the tomato sauce and water. If you want a slightly sweeter flavor, you can add raisins at this stage. Also, add the bay leaf for extra flavor.
Bring the mixture to a simmer, then lower the heat. Cover the pan and let it simmer for about 15-20 minutes or until the potatoes are tender. Stir occasionally to prevent sticking.
Add the green peas and cook for an additional 5 minutes, or until they're cooked through.
Season with salt and pepper to taste. Adjust the seasoning as needed.
