Ingredients:
1.5 lbs (700g) chicken pieces (legs, thighs, or a whole chicken, cut into serving pieces)
1/2 cup vinegar (white or cane vinegar)
1/2 cup soy sauce
1 head of garlic, minced
1 onion, sliced
1 bay leaf
1 teaspoon whole peppercorns
2 tablespoons cooking oil
1 cup water
Salt and pepper to taste
Instructions:
In a large pot or pan, heat the cooking oil over medium heat.
Add the minced garlic and sauté until fragrant and lightly browned.
Add the chicken pieces and cook until they turn lightly browned on all sides. Season with a pinch of salt and pepper.
Pour in the vinegar and let it simmer for about 2-3 minutes to remove the strong vinegar taste.
Add the soy sauce, bay leaf, and whole peppercorns. Stir everything together.
Pour in the water and let the mixture come to a boil. Then, reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the chicken is tender and the sauce has thickened.
Adjust the seasoning with salt and pepper according to your taste.
Serve hot over steamed rice. Garnish with sliced onions if desired.
