Ingredients:
1 rope sausage (like hillshire farms or johnsonville) whatever kind you prefer
3 bell peppers
1 red onion
3 cloves of garlic (sliced or minced)
10 oz cherry tomatoes
1 tablespoon oregano
1 tablespoon olive oil
Salt and pepper
White rice to serve over
Directions
Preheat oven to 400 degrees F. Slice your sausage into equal size pieces, about 1/4 of an inch.
Slice your bell peppers and onion thinly. Leave cherry tomatoes whole. Put everything together in a nice big bowl.
Add your olive oil, oregano, garlic, salt, and pepper to the bowl and mix. Then add your sliced sausage and mix again. Spread everything out evenly on a foil lined baking sheet.
While that is in the oven you can start your rice. Leave in the oven for 40-45 minutes. Stir a bit after 20 minutes.
