Ingredients:

  • 1 rope sausage (like hillshire farms or johnsonville) whatever kind you prefer

  • 3 bell peppers

  • 1 red onion

  • 3 cloves of garlic (sliced or minced)

  • 10 oz cherry tomatoes

  • 1 tablespoon oregano

  • 1 tablespoon olive oil

  • Salt and pepper

  • White rice to serve over

Directions


  1. Preheat oven to 400 degrees F. Slice your sausage into equal size pieces, about 1/4 of an inch.

  2. Slice your bell peppers and onion thinly. Leave cherry tomatoes whole. Put everything together in a nice big bowl.

  3. Add your olive oil, oregano, garlic, salt, and pepper to the bowl and mix. Then add your sliced sausage and mix again. Spread everything out evenly on a foil lined baking sheet.

  4. While that is in the oven you can start your rice. Leave in the oven for 40-45 minutes. Stir a bit after 20 minutes.
