About Me:
Hi, I'm Sarah Fitzsimmons! You might know me by my maiden name, Sarah Oliver. I am a 4th year PhD Candidate at the University of Missouri in the Division of Biological Sciences. I plan to defend in Spring 2026 and am in the market for a job or postdoc!
In my dissertation research, I am uncovering the genetic basis of free asparagine accumulation in corn kernels, as it is a precursor to the dietary carcinogen, acrylamide. I am also involved in the Circular Economy that Reimagines Corn Agriculture, a project that aims to reduce the enviornmental impact associated with growing corn. I am passionate about using genetics to increase sustainability, nutrition, and flavor of corn.Â
When I am not in the field or lab, I enjoy spending time with my husband and our small zoo (including but not limited to a dog, cat, frog, five beetles, six chickens, a crayfish, and several fish), painting, baking, and being outdoors.
