OUR ROOTS
Santa Cruz, Guanacaste, is widely known as the "National Folklore City" of Costa Rica. It is celebrated for its deep-rooted traditions, including marimba music, vibrant rodeos, traditional food, and colorful masquerades (payasos).
The gastronomy of Guanacaste is deeply influenced by the traditions of the Chorotega people, one of the region’s oldest cultures. Their cuisine is based mainly on corn, using ancestral techniques to prepare foods such as tortillas, tamales, and drinks like horchata, chicha. Fresh, local ingredients, wood-fire cooking, and simple recipes reflect a lifestyle connected to the land and the rich cultural heritage of the Chorotega communities.
