Aria turned 6 months in mid-july. While I have every intention of making her baby food (seriously we have the jars and pouches for it) I also wanted to her try a large variety of foods first. I wanted to see what she most enjoyed, and what she wasn't too thrilled about, before making the commitment to making it at home. During a recent shopping trip to our local HEB I found a large sale on pouched foods by HappyBaby. They had an assortment of different mixes of fruits, vegetables, and grain to choose from. I ended up getting 10 different flavours for Aria to try. We are making note of her reactions to each one. So far, she loves anything with squash.
I have developed a very healthy obsession with oatmeal since before my daughter was born. I would it late in my pregnancy since it was so easy to make and I was so tired in the mornings. It was also easy on my stomach and helped keep me regular. After giving birth a continued to chow down on oatmeal because it not only had vital nutrients for keeping me health but also aided in increasing and sustaining a breastmilk supply. Since I have been eating so a while, I have started to get more creative with it.
I love pancakes, but feel it can be such a chore to make them from a box or even scratch. I also have been wanting to cut down on my wheat consumption just because I tend to feel better when I do that. In came an idea of simply using oats as the flour replacement! Adding baking powder and an egg helped to bind it all together to make some quick and easy oat flour pancakes. It is basically oatmeal in pancake form.

My husband loves citrus fruit ESPECIALLY when in baked goods. Lately he has asked for Pineapple upside cake several times. He also requested it be sweet, indulgent and as original as possible. Naturally I turned to Google. I ended up finding a recipe on Betty Crocker. One that was a recipe for making it from scratch and not from a box. I did tweak it somewhat after the first as my husband believed it wasn't sweet or "pinapple-y" enough.
My local HEB had a HUGE sale on a fresh blueberries this past week. I am talking 1 pint for less than a dollar. We usually just buy frozen (a.k.a. cheaper) so I could not pass up the opportunity for fresh blueberries. I plan on making baby food for Aria, pancakes, a smoothie, and naturally oatmeal!
First up was oatmeal. I've been eating almost everyday for the last 6 months so naturally it would be my go to. To really get into the late summer feels I added in some white chocolate and coconut.
Talk about yummy!
The blueberries were so juicy and more on the sweet side rather than tart like some can be. They were also so big and round! The recipe is super easy. Give it a try and I hope you enjoy it!

Aria Iris Houston was born Tuesday Jan 15 2019 at 10:10 am weighing in at 8lb9oz, 22 inches long with a 13.5 inch head. She came close to beating her dad's stats(one pound under him) and she blew mine out of the water.
