Frozen Vegetables

Are frozen vegetables healthy as fresh?

Frozen vegetables are generally considered an affordable and convenient alternative to fresh vegetables.

Not only are they generally cheaper and easier to prepare, but they have a longer shelf life and can be purchased year-round.

However, you may not be sure whether frozen vegetables are as healthy as fresh vegetables.

The prevailing belief is that uncooked fresh produce is more nutritious than frozen...but this is not necessarily true.

A recent study compared fresh and frozen produce, and experts found no real difference in nutritional content.

Studies have shown that blanching and freezing vegetables for up to 2 months does not significantly change their phytochemical composition. In fact, the score of fresh produce after 5 days in the refrigerator is worse than that of frozen produce.

Researchers also found that frozen corn, blueberries and green beans have higher vitamin C content than fresh ones.

Vegetables are usually frozen immediately after harvest, which helps them maintain their nutritional status.

Buying frozen vegetables makes it easy to prepare a healthy meal. The vegetables are already cut, all you need to do is defrost, cook, and then add protein and grains.

So you can safely choose frozen vegetables without worrying about its nutritional value.
