If you have any educational resources dedicated to racing kings and you think it's worth adding to one of the lists below, you're welcome to contact me about it and I'll have a look.
There are plenty of studies on lichess that could help you learn more about the wonderful world of opening theory.
However, as with all variants, theory continues to develop and no study can stay up to date forever. I've added a small description with my personal assessment to each study link, but ultimately it's up to you what you want to use and what works best for you.
Modern Racing Kings openings: an introduction by RoyalManiac. It's my own study, so obviously I can't help but recommend it. Unfortunately it's far from complete, but still useful especially for basics.
Babosos's Racing Kings openings by Babosos. Despite having been created in 2018 / 2019, this study is still very accurate and the featured opening lines have stood the test of time. Covering all main openings to an extent, this study is absolutely worth looking at as well.
Racing Kings Openings by ChessWhiz, NM TheLlamaLord & TheRacingProfessor. Being the most extensive opening study ever created for RK, this contains a wealth of information about the state of opening theory in 2016 / 2017. Unfortunately, with the rising influence of Stockfish evaluations in the development of opening theory, both the opening theory and your average players' repertoires have changed since the creation of this study. A significant portion of the lines is either outdated or considered to be refuted according to modern theory. Add to that that certain endgame evaluations or explanations are completely wrong, and it's safe to say that the engine evaluation should be consulted before taking anything for the truth.
Racing Kings Nd4 Opening Study by ThisIsRex. A bit of an unusual study subject to expand on, but 1.Nd4 deserves way more love than it is currently getting. This extensive study delves deeper into the ideas and theory behind the "5th" opening of racing kings.
The 4 Main Openings In RK by Yehonatan-Chess. Modern theory for all four main openings, with a really good amount of entered variations and some commentary as the cherry on the cake.
Racing Kings Kh3 Opening Study by ThisIsRex. This being the least popular and least advantageous of the four main openings, 1.Kh3 theory isn't used that often. This study offers a good introduction to what's possible when you make a calm opening work in your advantage.
Bd4 Nc3 Brief Opening Guide by Tesset12 & Francis920. Being a variation of the popular "bishop symmetry" opening, 3.Nc3 is unique, solid and effective all in one package. All important lines are well explained in this introduction to the opening line.
Racing Kings by FalconPower & konstantinua00. Featuring refutations of a few losing opening ideas, these lines are important to be aware of as well to exploit your opponent's mistakes to the fullest.
Racing Kings Bad Openings by Yehonatan-Chess. Same idea as the study by FalconPower, a quick recap of some bad openings and why to avoid them.
An untheorised idea in Kg3 Nxf2 Kf4 for black by RoyalManiac. This study focuses on a very specific deep variation of one of the main opening lines, that at the time of creation was still barely explored and to this day remains relatively unknown and effective. It's worth considering to add to your opening repertoire, but requires knowledge of the main opening line to be useful in any way.
Bh4 RK Opening Repertoire by Yehonatan-Chess. A nice little introduction to an uncommon and unsound opening. Moral of the story, every opening can be good if you use it in the right way :-)
Top Level RK Moves/Openings by Yehonatan-Chess. A study that's still under construction, but it already includes some nice lines.
Endgames are a truly underrated subject in racing kings. As a consequence, barely any studies have been created explaining endgame positions. Here's those I am aware of:

Rook or Queen in RK? by RoyalManiac
Racing kings puzzles are available in various studies on lichess and on chessvariants.training.

Some advice just can't be accurately captured in a lichess study. That's why we have this category, consisting of lichess forum posts filled with wise words about racing kings.
The go-to place for RK match commentary and other video content is currently my Racing Kings Academy channel. It includes commentary streams from the 2021 and 2022 Racing Kings WC, and more content is coming soon :-)
There's quite a few lichess content creators that made their own videos about RK to share what they know about the variant. Here's an overview of some of the videos that are currently available on youtube. Please note that this is not an exhaustive list, and that some videos may have been overlooked or purposefully left out.
