Rabbit meat is close to chicken meat in terms of dietary indices, and surpasses it in percentage protein and fat content. In the meat of full-grown animals the water content is 60-67%, protein - 20-21 and fat - 3-18. Vitamin and mineral composition of rabbit meat is virtually incomparable with any other meat. Thus, rabbit meat contains vitamins B6, B12, PP much more than in beef, mutton, pork. A lot of iron, phosphorus and cobalt in it, in sufficient quantities of manganese, fluorine and potassium. At the same time, rabbit meat is poor in sodium salts, which makes it indispensable in dietary nutrition.
