One Question Shootout is a go-to for The Chase fans who want to crunch the numbers. Their website has everything you would need for the British version of the show including an episode list, statistics for both the contestants and the Chasers, and even pictures of Chasers in each series and special episodes. This website has been the point of interest in most of my works.
James has developed a spreadsheet for the Australian version of the show. It not only displays the win rate, average speed, and accuracy of each Chaser in The Chase Australia, but it also shows the milestones that each Chaser has achieved (like the Chasers' 100th appearance). However, keep in mind that James does not record statistics for each individual contestant unlike One Question Shootout.
This website made by Sebastian shows the statistics for Gefragt-Gejagt, the German version of The Chase. Although not as frequently updated anymore, it still gives a comprehensive analysis of each Chaser's performance.
