If you need a quick, no-bake dessert, these coconut balls made with biscuits are a perfect choice — especially with juicy cherries inside!
Instructions:
Drain the cherries well and sprinkle with a little rum or rum aroma. Let them sit for 10–15 minutes to soak up the flavor.
Cream the butter with the powdered sugar, cocoa powder, and remaining rum.
Add the ground biscuits and cherries.
Gradually pour in some of the reserved cherry juice, mixing until you get a soft, moldable dough. You want it moist but not sticky.
Form the balls: roll small portions of dough into balls (about the size of a walnut).
Roll each ball in shredded coconut until fully coated.
Place the balls in the fridge for at least 30 minutes to firm up.
