Instructions:
Bring the milk to a boil, then slowly add the semolina while stirring constantly. Cook until thickened.
In a separate bowl, beat the egg yolks with 2 tbsp sugar and the vanilla sugar, then stir this mixture into the cooked semolina. Cook together until very thick.
Remove from heat and stir in the butter and lemon zest while still hot. Gently fold in the stiffly beaten egg whites (whipped with 1 heaping tbsp sugar) until light and fluffy.
Rinse a bowl with cold water, pour in the pudding mixture, and let it cool completely.
Once cooled, turn the pudding onto a plate and top with mixed forest berry jam or your favorite fruit preserves.
We can enjoy it with fresh fruit, any kind of jam, or even vanilla custard.
