tofu & Veg Red Curry over Sweet Potato Spirals

INGREDIENTS:       ~35min prep time; serves 4; vegan

~ red curry packet 

~ 1 can of coconut milk 

~ 1 package of tofu 

~ 1 box of sweet potato spirals

~ 1 head of broccoli

~ a hand full of snow peas

~ 1 zucchini

~ 1 red onion

~ sesame oil 

~ minced garlic 

~ ginger powder 

~ lime juice


~Featured Herb: cilantro

~Secret Ingredient: maple syrup


DIRECTIONS:

1. Chop all vegetables and tofu into bite-sized pieces.

2. Heat sesame oil and garlic on medium heat until sizzling in a medium-large sized pot. 

3. Add all vegetables, sweet potato spirals and tofu to pot.  Dust lightly with salt. Cook over medium heat until soft.

4. Mix red curry packet and 1 can of coconut milk.

5. Continue adding condiments as you taste, but begin with 1/8 tsp of ginger powder, 1 table spoon of lime juice, and 1 tsp of maple syrup.

6. Once the flavor is to your liking, let it simmer on low heat for 10-15 minutes.

7. Serve with a garnish of fresh cilantro. Enjoy!
