~2 dozen medium shrimp
~2/3 cup of walnuts
~3tbsp of honey
~1/4 cup of soy sauce
~1/4 cup of corn starch
~2 eggs
~2 tbsp of olive oil
~salt and pepper
1. Peel and rinse shrimp.
2. Crack and beat 2 eggs in a bowl. And prepare 1/4 cup of cornstarch on a plate with a light dusting of salt and pepper.
3. Heat 2tbsp of olive oil in medium pan on medium heat. Dip shrimp in eggs and then corn starch one by one and add to pan.
4. Once shrimp have been cooked through, mix 1/4 cup of soy sauce and 3tbsp of honey, and pour over shrimp.
5. Bring mixture to a boil. Add walnuts. Then bring it down to a simmer mixing occasionally for about 5 minutes until sauce thickens.
6. Serve over desired grains or brown rice. Enjoy!
