~1 bag of red lentils
~1 onion
~2 tbsps curry powder
~1 tbsp turmeric
~1 tbsp salt
~2 tbsps olive oil
~2 hard boiled eggs
~hummus
~sesame seeds
~Secret Ingredient: paprika
1. Chop up onion and heat in a pot on medium-low heat with 1tbsp olive oil until onions begin to brown.
2. Add red lentils and water to the pot at a 1:2 ratio. 2 cups of lentils to 4 cups of water.
3. Stir in 1tbsp of salt, 1tbsp of turmeric, and 2tbsp of curry powder--adding more later to taste.
3. Bring lentils to a boil, then allow to simmer covered for approximately 15-20min until lentils become soft. Add water to change consistency from thick to soupy as desired.
4. Top it off with hummus, hard boiled eggs, sesame seeds and paprika if desired.
