GRANA BRODO

We save all our cheese rinds from the large blocks of Grana Padano. When there are enough rinds I start the process to make Grana Brodo.  This entails about 8 hours of cooking, straining and adding a few special ingredients.  The product of hours and hours of cooking results in a portion of silky smooth broth that can be used in a large variety of ways.  From flavoring risotto and veggies to using as a finish to any pasta dish or make a soup.  If you typically use broth, you can substitute Grana Brodo instead. Enjoy!
