Ingredients


  • 5 russet potatoes- peeled and sliced into 1/4inch pieces

  • 1lb Italian sausage ( Hot or mild)

  • 1 bag of spinach- stems removed

  • 1 white onion finely diced

  • 5 cloves of garlic minced

  • 4 cups chicken stock

  • 6 cups water

  • 1 cup heavy cream

  • salt and pepper

  • Parmesan cheese (optional)

Directions


  1. In a large pot add your Italian sausage over medium high heat. Break it up with a spatula until cooked (about 5 minutes). Move your sausage to a paper towel lined plate.

  2. Add in your diced onion and saute until soft and browning,

  3. Add minced garlic and saute for 1 minute.

  4. Add your 4 cups of broth and 6 cups of water. Bring to a boil.

  5. When at a boil, add in your sliced potatoes. Cook for 13 minutes until potatoes are nearly done.

  6. Add in your spinach and cooked sausage and bring to a light boil.

  7. Stir in 1 cup of cream and bring to a boil.

  8. Remove from heat and season with salt and pepper to taste. Top with fresh parmesan if desired.
