No-Bake Keto Cheesecake

Here is the solution for your cooking break. I know everyone is tired of working in front of the heat, so I came up with all you need. It requires a few minutes of preparation but takes time to chill.

Keto cheesecake is a delicious and creamy cake without using any oven required to bake it. The keto lovers are low carb food, so it is also perfect for the person who follows their keto diet plan.


Low Carb Cheesecake – keto-friendly


Keto cheesecake is different from the traditional cheesecake. You can enjoy it as plain without using any topping. But you can add your desired topping like slices of strawberries or ice cream scoop.

Here I will give you your favorite cheesecake recipe with a perfect amount of ingredients and be keto-friendly.

  • Almond Flour

  • Butter

  • Erythritol (sweetener)

  • Heavy Cream

Note: I prefer buying full-fat dairy when you are following a keto diet. It helps you to replace the extra carbohydrates.

Cheesecake is a three-step recipe so follow all these steps carefully with your full attention.


Step 1: The Crust

The crust is the first and basic layer in cheesecake. Take vanilla, almond flour, sweetener, and melted butter together. Make sure it will be a thick mixture, just like the dough of cookies.

Take a pie pan and add the mixture to it by pressing. Use your fingers to make an equal layer (you can also use a spoon)

The crust is ready to cool. Please place it in the refrigerator for at least an hour until it hardens. If you want more hardness, you can also bake for 10 to 15 minutes(optional). If you bake, make sure that it's completely cool before adding the filling.


Step 2: The Filling

So when your crust is chilling, let's make the delicious filling.

Take cream cheese at room temperature and add one teaspoon of vanilla and a cup of sweetness. Mix until it is thoroughly mixed. It finally looks like a thick cream.

Now take sour cream and mix with prepared cream. Don't beat it until it's thoroughly combined. It looks like a light pudding texture.

Make sure that you mix the sugar and cheese first, then add sour cream. It affects the texture and final consistency of cream. If you follow this sequence, you will get a smooth surface. But if you add it all together, then your cream becomes clumpy.


Step 3: Chill and Seal


Now your filling and crust are ready to come together. Please take out your chilled crust and add the filling to it by simply pouring it on the top.

Cover it with plastic wrap or lid.

Note: wait until your crust is completely cool before you add the filling. If you add it on warm, then all your fillings turn into running liquid.

It's better to seel the cake with a plastic cover, so it remains creamy, but it becomes grainy if it is open in the air.


Now your cheesecake is ready, place it in the fridge and wait for two to three hours to get a perfectly cooled cake and enjoy. If your cheesecake isn't as thick as you like, you may place it in the fridge for another 1-2 hours for the creamy cheese filling to solidify more.
