Chinese Slow Cooker Chicken
Ingredients
2.5 to 3 lbs Boneless, Skinless Chicken thighs or breasts
1 cup low sodium Soy Sauce
1/2 cup Brown Sugar
4 Tablespoons Lemon Juice
2 Tablespoons Canola Oil
1/4 teaspoon Garlic Powder
Cooked Rice, enough for about 6-8 servings
2-3 Tablespoons Cornstarch (optional-for thickening the sauce)
Directions
Add chicken to slow cooker. Whisk together the rest of the ingredients.
Pour sauce over chicken in slow cooker
Cover and cook on high for about 4 hours or cook on low for about 7-8 hours. This depends on how your slow cooker cooks. Cook until chicken is very tender.
If desired, pour sauce from the slow cooker into a pot and put on stove. Whisk in cornstarch and bring to a boil. Simmer until sauce thickens to your liking.
Pour sauce over chicken and serve with rice and veggies.
