Owner Rolando "El Jefe" Sandrea, a former chemical engineer, has turned his kitchen into a personal lab where he experiments with traditional recipes that have been passed down from generation to generation, making their way to him. He takes these recipes and makes them his own while preserving the Venezuelan time-honoured culinary roots and tastes.
