📝 Ingredients (Serves 2–3)
Cauliflower – 1 medium head (about 400–500 g), cut into florets
Salt – 1 tsp (for soaking) + ½ tsp (for cooking, adjust to taste)
Water – enough to soak
Cooking oil – 3–4 tbsp
Dried shrimp – 2 tbsp (a small handful)
Onion – 1 medium, sliced
Garlic – 4–5 cloves, minced
Fresh chives – 2 tbsp, chopped (or spring onion greens)
Parsley garlic salt (or garlic seasoning) – 1 tsp
Black pepper – ½ tsp (optional)
🍳 Preparation Steps
1. Clean the Cauliflower
Break cauliflower into small florets.
Add 1 tsp salt to a bowl of water.
Soak the florets for 10 minutes to remove dirt and impurities.
Drain and pat dry.
2. Fry the Cauliflower
Heat 3–4 tbsp oil in a pan or wok over medium-high heat.
Add cauliflower directly to the hot oil.
Stir-fry for 6–8 minutes until golden brown and slightly crispy.
Remove and set aside.
3. Cook the Aromatics
In the same pan, add a little more oil if needed.
Add dried shrimp and fry for 1–2 minutes until fragrant.
Add sliced onion and minced garlic.
Stir-fry for 2–3 minutes until soft and aromatic.
4. Combine Everything
Add the fried cauliflower back into the pan.
Add:
½ tsp salt
1 tsp parsley garlic salt
½ tsp black pepper (optional)
Toss everything well.
5. Finish
Add chopped chives.
Stir-fry for another 1–2 minutes until evenly mixed.
🍽️ Serve
Serve hot and crispy.
Perfect as a side dish or with rice.

Do not boil the cauliflower—this keeps it crispy.
Make sure the cauliflower is dry before frying to avoid oil splatter.
You can skip dried shrimp for a vegetarian version.
