Easy Snickerdoodle Zucchini Bread

Ingredients

  • 3 eggs

  • 1 cup vegetable oil

  • 1 3/4 cups granulated sugar

  • 1 teaspoon vanilla extract

  • 3 cups all purpose flour

  • 2 teaspoons cinnamon

  • 1/2 teaspoon allspice

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon cream of tartar

  • 1 teaspoon salt

  • 2 cups grated zucchini (about 1 large zucchini)


Topping


  • 1/4 cup granulated sugar

  • 1 teaspoon cinnamon

  • 1/4 cup brown sugar


Instructions


  1. Preheat oven to 350 degrees. Grease and flour two standard sized loaf pans and set aside.

  2. In a large mixing bowl, mix oil, eggs, sugar, and vanilla until well combined.

  3. In a separate bowl, combine dry ingredients and mix together

  4. Pour the flour mixture into the egg mixture and mix again until fully combined. Batter will be thick. Stir in zucchini until fully incorporated.

  5. In a small bowl, combine topping ingredients.

  6. Pour half the batter into prepared pans and sprinkle with 1/2 cinnamon sugar mixture.

  7. Cover with remaining batter and sprinkle with remaining cinnamon and sugar.

  8. Bake at 350 degrees for 45-50 minutes or until a knife is inserted and comes out clean. Allow to cool before slicing
