Ancient tea is like a living being. It tells stories - if we listen. You can brew it hot, to hear its whispers in a warm teapot. Or brew it cold, to taste its quiet purity unfolding drop by drop.
Whether you’re looking for a warm, calming sip or a cool, refreshing drink, here’s a guide to brewing ancient tea the way it deserves.
3–5 grams of ancient tea (white, green, or black)
Pure water (spring or filtered)
A teapot or gaiwan
Small teacups
Warm the teapot
Pour hot water into the teapot or gaiwan. Swirl gently, then discard the water.
This warms the vessel, inviting softness to the leaves.
Awaken the leaves
Place the tea leaves inside. Pour a small stream of hot water-just enough to cover. Swirl gently, then pour it away.
A rinse to brush off dust, and whisper the leaves awake.
The first infusion
Pour hot water over the leaves - steeping time and temperature depend on the type of tea, as shown in the figure below.
4. Enjoy
Sip slowly. Notice the pale gold hue. You might catch hints of wild honey, forest air, flowers, and grass.
Sip gently, and let each layer reveal itself
5. Re-infuse
Ancient tea shines through multiple infusions. Each brew offers a deeper, softer sweetness.
Add 5–10 seconds more with every new infusion.
Avoid boiling water - it can harm the delicate leaves.
Don’t overcrowd the teapot - let the leaves stretch and bloom.
Every palate is different - feel free to adjust steeping time to your liking.
3 grams of ancient tea
500ml cool, filtered water
A glass jar or bottle
Place tea leaves in the jar. Pour water gently over.
Cover and chill. Let it rest in the fridge for 8 hours.
Strain and serve cold. Enjoy plain, or over ice.
Cold brew keeps well in the fridge for up to 24 hours.
