Below are some resources from previous classes I've taught; these are primarly syllabi, but both Topology pages include examples of final projects for those classes, and my Topology notes are publicly available below.
Provided the instructor has time to give multiple rounds of rigorous feedback (in my experience, this means classes should be no more than 30-40 students), I find that final projects can be excellent tools for final assessment and enrichment. If you're an instructor reading this page, I encourage you to consider them.
