Stuffed Zucchini Flowers
6 zucchini flowers
Filling:
2 tsp Max's Super Spices (or more if you like it hotter)
1 cup ricotta
1/2 tsp mixed herbs
1/4 tsp smoked paprika
1 tsp hot paprika
Salt and pepper to taste
Preheat oven to 180 degrees.
Mix filling ingredients and add to a piping bag. Open zucchini flowers enough to put piping bag tip in and fill them with the filler. Place on baking tray lined with baking paper (sprinkle more mixed herbs on top if desired) into the oven and cook for approx 15 to 20 minutes.
Chilli Prawn and Scallop Pasta
Fry garlic, anchovies, lime zest with 4 tablespoons of Max's Super Spices Chilli Paste for a minute.
Add chopped parsley, shallots, prawns, scallops and a handful of snow peas. Stir fry for a few minutes.
Turn the heat down and add 1/2 cup of cream, then add no more than 1/4 cup of water from the pasta to thin the sauce.
Salt and Pepper to taste.
Add to cooked pasta and top with grated Pecorino cheese!
