1. Heat 1 tbsp olive oil in a large pan over a medium heat. Add the soffritto mix, garlic and rosemary with a pinch of salt and pepper and sweat for 10 minutes, until soft.

2. Add the smoked tomato paste, stir and cook for 30 seconds. Add the red wine and simmer until reduced in volume by half. Add the chopped tomatoes, cinnamon, bay leaf (if using) and stock. Bring to a boil, then stir in the turkey.

3. Reduce the heat, cover loosely and simmer for about 1 hour, until you have a thick, rich sauce.

4. With 5 minutes to go, cook the pasta according to the packet instructions, then toss into the cooked ragu to coat. Serve topped with grated parmesan.

For a fun family dinner between Christmas and the new year, try transforming your leftover turkey into an amazing homemade pizza. To make it, simply spread some of our special pizza sauce over one of our ready-made pizza bases (you can find them both in store). Then top with shredded turkey and crumbled leftover stuffing, mozzarella and a few spoonfuls of our caramelised onion chutney.

I get mine from the local butcher. It is a boned and rolled turkey breast which I could have stuffed if I wanted it. He also covers it with bacon. I prefer to cook my stuffing separately with sausages and rolled up bacon on top plus a little turkey fat. I actually got mine a little ahead of time and it is in the freezer but there are plenty around if you enquire.

i don't know if it's beyond your budget but we ordered turkey and trimmings from farmison last year. very happy with everything including delivery, don't know if the eyewatering price hypnotised me but the meat all tasted really special. ordering again this year and as far as i can see they still have delivery slots/availability.

I used to order a turkey from M&S. The queues wpund rpund the store and it took about an hour. Much quicker tonwalk in and take it to the checkout. There will be plenty on the shelves. Or buy one next week and whack it in the freezer. No big deal x

Cooking a full turkey isn't always economical or practical any more, especially if you are a small family or want an option that can fit easily in an air fryer. I've got bad memories about the Christmas I cooked for the extended family when I somehow went awry on my timings for a whole bird that caused the ultimate late lunch.

Frozen boneless turkey joints, all prepared and ready to go in the oven, are now common across supermarkets to offer a hassle-free option. The burning questions though are how tasty are they really? Do they look anything like the mouth-watering photo on the packaging once cooked and how do prices compare?

Bernard Matthews and his famous Norfolk turkeys are a brand leader and I compared its stock basted Turkey Breast Joint that can be cooked from frozen with supermarket versions. It went up against Marks & Spencer, Aldi, Lidl, Tesco, Asda, Iceland and Morrisons.

It's just the turkey breast with a sprig of rosemary prettily on top and no other extras. The price works out as the most expensive per grams at 1.77 per 100g. It also has added water but the meat is tender and juicy and has the right consistency.

It does have a very good flavour as it's been basted in turkey stock but the size relative to the price isn't good value. Docked points for its very high price and not coming with stuffing or bacon either.

This was the only cook from frozen turkey joint I could find by Tesco's and it leaves a lasting impression. Although it's a bit stubbier than it looks on the box but there is plenty of it. It says it will feed six, but that would only just. Not the cheapest, but at the lower end, but makes up for it on outstanding taste and extra meats and stuffing.

Tom Holder, of the British Retail Consortium, told how there are many reasons behind the price hike. He said: The weaker pound will have had an impact on driving up the global cost of turkey. Land transport is expensive at the moment and so is animal feed.

Soft duck, very similar in consistency to that present in the stalwart M&S duck wrap, and a nice sweet fruity base. It's the very existence of this sandwich that's interesting. A decent amount of turkey, solid application of cranberry sauce, and plenty of stuffing that's on the right side of stodgy so you feel like you're eating something reassuringly robust and not something that will still be working its way through your digestive tract at Easter.

If I've got one complaint here, it's the absence of a little bacon. I know it's there in the Christmas turkey sarnie M&S are offering, so it does feel a little bit like you're getting short-changed when it's absent here. Still, plenty to like and a very enjoyable eat.

What? I saved the chicken one until the end? Well, no, I didn't when I ate these but I should have done and will next time. The Chicken Dinner sandwich is the secret star of the show here, a little piece of Christmas tucked away between the reliable turkey and the posh-as-the-neighbours duck.

The M&S gluten free Christmas sandwich is an old favourite and one that is celebrated every year. The Made Without Wheat Turkey Feast sandwich is packed with turkey breast, pork, sage and onion stuffing, cranberry chutney, onion mayonnaise and smoked bacon.

What impact is this going to have on our food supplies? We know that disease affects turkeys and geese much more severely. The minister says there is no immediate threat but it is reported we already have a 20% supply issue on free range turkeys.
