Our Story

The very essence of Hayman’s is that we still make our gin today using the same family recipes developed over 150 years ago. Using only the finest botanicals available combined with the two-day gin making process, our botanicals are infused in English wheat spirit for an entire day allowing the full natural flavours to shine through.

Our traditional process is rare in this age of modern gin, however we are convinced it is this technique, as well as further innovations, which has led to the most highly acclaimed awards as well as continued positive acclamation for Hayman’s Gin. Whilst we stay true to how our gin has always been made – James and Miranda Hayman are adamant about pioneering gin for future generations.

In recent years some of our innovations include Hayman’s Gently Rested, Hayman’s Hopped Gin and Hayman’s Small Gin, the most impressive innovation in gin for more than 100 years. So often – for whatever reason – we look for a drink with lower alcohol and fewer calories. Hayman’s Small Gin ™ makes a G&T with both 80% less alcohol and less calories, with no compromise on the great taste of a Hayman’s G&T. A thimbleful is all you need – just pour over ice and top up with tonic.

Hayman's Gin London Old Tom - Hopped Gin

Hayman’s True English Hopped Gin is the first in our Bartender’s Release series and was co-created by Bartender Jordan Sweeney of The Wigmore Tavern at the Langham Hotel, London.

To our signature blend of ten botanicals we have added fresh grapefruit and the heritage English Fuggle hop varietal – introduced to England in 1861. The bright citrus burst from the grapefruit creates the perfect foil to the pronounced grassy, menthol notes from the hops to create a wonderfully balanced serve.

Hayman's Gin London - Gently Rested

A wonderfully smooth, rounded and well-balanced gin, with peppery and spicy notes from the dominant botanicals – juniper and coriander – adding to its full-flavoured individuality.

In the same way that gin was rested in casks rather than bottles in London’s ornate Gin Palaces during the 1800s, ours is rested in old Scotch Whisky barrels for just three weeks. Such short contact with wood really lifts our botanical flavours and enhances the peppery spice.

Wonderful fruity notes from the wild-foraged berries combined with our award-winning London Dry Gin. Choose our hand gift wrapped Sloe Gin for the perfect gift.

The process, another of our Hayman’s long-standing family recipes, takes 3-4 months before the infusion is blended with natural sugars. The result is plummy aromas, hints of almond and frangipane and delicious fruity notes – it’s not too sweet, not too tart and you can still taste our gin! Our 70cl bottle can be hand-wrapped for the perfect present.
