1 Onion, diced
1 Green Bell Pepper, diced
2-3 Large Carrots, diced
2 Tbsp Olive Oil
2-3 garlic cloves, minced
Dark Red Kidney Beans
Light Red Kidney Beans
Pinto Beans
2 Cups Lentils
2 Cups Veggie Stock
1 12 oz Jar of Salsa
24 Ounce Can Crushed Tomatoes
1 Packet Extra-Spicy Chili Seasoning Packet
Heat sauce pan to medium-high heat. Add oil, allow to heat through. Add garlic, onion, bell pepper & carrots. Cook through.
Add beans, lentils, veggie stock, salsa, crushed tomatoes and seasoning. Bring to a simmer and cook for 30-35 minutes.
