Hi!! My name is Mony. I'm a medical doctor, Kasr al Ainy, Cairo University.
I've been struggling to loose weight for so long.I've tried several diets, some were successful and a lot weren’t. In November 2013 I got to know about the low carb diet , Atkins. It felt more like my style. I've been following the lifestyle to date. To me it is very comfortable, well structured, satisfying, curbing my cravings and, the best part, I could eat out with family and friends without them even noticing that I were even on any special regimen. Better yet, my cholesterol levels have never been so under control.
I've read a lot about low carb diets in the past 5 years to the point that I could confidently say that I’ve meticulously studied it. I was also encouraged to study Clinical Nutrition and I successfully earned a renowned diploma from the European society of clinical nutrition (ESPEN).
Low carb lifestyle opened my eyes to many alternatives to high carb foods and how to simply replace them and integrate alternatives in my daily menu. I've tried many recipes, some were a number one success, others were thrown away and many had fine-tuning and turned out great!
I was introduced to many foods that I never knew existed e.g chia seeds, psyllium husks, xanthan gum, agar agar, almond milk, nut butters, etc.… substitutions I never knew was possible e.g. caulirice, substituting cauliflower for rice or potatoes and new veggies I never thought I’d eat or cook differently e.g. kale, Brussel sprouts and radishes chips. The substitutes are, of course, pricey, but there’s always a price to be paid to follow a healthier, sustainable and satisfying lifestyle.
I replaced regular flour with other flours e.g. almond flour, coconut flour, flaxseed meal, whey protein isolate, psyllium husks, peanut flour and almond milk (I make my own now) and many more. Since I have struggled to find the ingredients and come up with nice recipes to fulfill my demands, I’ve decided to help others who follow a low carb style, paleo style or even with gluten allergies find a trusted, tried out meal.
