You can limit how Unity uses your data for ad personalization:

iOS users: Go to Settings > Privacy > Apple Advertising and toggle off "Personalized Ads".
Please note that even if you opt out of personalization, you will still see ads—they will just be less relevant to you.
Since the App itself does not collect any data, your app-generated local data remains solely on your device and is protected by your device's operating system security.
Any data collected by Unity Ads is subject to Unity's own security and retention policies, which you can review in their privacy policy (linked above).
The App does not knowingly collect any personal data from children under 13 (or under 16 in certain regions). However, Unity Ads may collect limited data from all users for ad purposes.
