Two best friends, a lot of baking… and maybe a little wine 🍪😏
Over the years, we’ve shared a lot… life, laughs, ups and downs — and a love of baking (and wine… lots of wine 😏).
For years, we had a tradition of getting together every Christmas to bake for our family and friends. When Stacey moved out of the city, it turned into a full three-day sleepover — flour everywhere, wine flowing, and way too many cookies being made. We loved creating a big variety of treats to gift, especially the beautiful decorated (Piped design) cookies… but let’s be honest — those are a lot of work (and after three days of baking, our bodies are no longer on speaking terms with us 😂).
We talked more than once about starting a baking business together, but it never felt like the right fit. We didn’t want to turn something we loved into something that felt like work.
Then things shifted.
In late summer 2025, I (Kari) started experimenting with cookie recipes... different ones than what we would bake at the holidays — testing, tweaking, and handing them out to anyone who would give honest feedback. After a few months of trial (and a lot of taste testing), I decided to see if people would actually pay for them.
At my annual holiday open house — I put out about 50 cookies and a small stack of order forms, just to test the waters.
They almost completely sold out.
Even better — people started placing orders.
That’s when it clicked:
this could actually work… and more importantly, it was still fun.
I was telling Stacey everything as it was happening — the experimenting, the feedback, the open house, the orders — and at first, she wasn’t sure if joining me was something she could take on.
But the more we talked about it, the more it started to feel possible.
When we got together for our annual Christmas bake, she made it official
“I’m doing this with you.”
And just like that… we were finally doing that thing we’d been talking about all these years — just with "different" (and even better) cookies. 😄
After a lot of planning (and probably more wine), The Loaded Bite Cookie Co. was born — built on years of friendship, creativity, and a shared love of really good cookies.
Today, we each bake from our own licensed home kitchens — Kari in Calgary and Stacey in Carbon — but everything we create is shared.
Same recipes, same techniques, same slightly obsessive attention to detail. We’re constantly comparing notes, testing, tweaking… and yes, we even have regular “cookie council” meetings to make sure everything meets our standards.
So no matter which kitchen your cookies come from, you can expect the same quality every single time.
Our focus is simple:
small batch, big flavor, no shortcuts.
We’re not here to mass-produce cookies.
We’re here to make the kind you think about later — the ones you go back for, the ones you don’t really want to share (we get it 😏).
We’ll be offering regular cookie drops throughout the year, along with markets and seasonal bakes — and we’re learning as we go how to grow this in a way that keeps it exciting, creative, and something we genuinely love doing.
Because at the end of the day, that’s what this is really about.
Two best friends, doing something they love… and getting to share it with you.
