Chocolate Peanut Butter Keto Fudge

Time: 3 hours and 15 minutes (15 minutes active)

Serves: 20

Ingredients


1 cup peanut butter

3/4 cup coconut oil

3 tablespoons unsweetened cacao powder

3 tablespoons cacao nibs

3 tablespoons Lakanto monkfruit sweetener (for non-Keto fudge, subsitute with honey or maple syrup)

1/2 cup chopped peanutes

1/2 cup unsweetened coconut flakes

1 teaspoon vanilla


Directions


1. Line a 9" x 9" glass baking dish with parchment paper. Set aside.


2. Combine ingredients in a large pot on the stove. Cook over medium-low heat, stirring until everything is melted and evenly mixed.


3. Pour into prepared baking dish. Refrigerate until solid, about 2 hours.


4. Remove from refrigerator and cut into 20 squares (four cuts one direction, five cuts the other). Freeze until completely solid, then remove squares from pan and store in a bag in the freezer.
