The brewing process starts with filtered water and milling fresh grain. The water profile is adjusted with brewing salts, minerals used to match and enhance particular styles of beer. Depending on the style we step-mash or use a single mash infusion. After mashing and boiling, the wort is chilled to the optimal temperature for pitching yeast and transferred to the fermenter. After fermentation, the beer is closed-transferred to kegs, for conditioning.
The Kosik Brewing logo incorporates a blackbird. In Western Slavic languages (Czech, Polish and Slovak) Kosík is derived from the word “kos”, meaning blackbird. The 3 stars are a mystery 🤨
