Test of South India
Freshness is key in our South Indian cuisine. Vegetables, lentils, rice, and fresh herbs are washed and chopped or soaked as needed. Many dishes begin with soaking rice and lentils for dosas, idlis, vadas, or uttapams. Coconut, curry leaves, green chilies, and garlic are often ground into pastes or incorporated into spice bases for gravies or chutneys. Fresh tamarind pulp, jaggery, or lemon juice may also be prepared in advance for flavoring sauces and curries.
