1 lb ground beef
1/2 cup ground pork rinds (optional)
3/4 C. parmesan
1 egg
1 t. salt
1/2 Tbsp Italian Seasoning blend
1/2 tsp onion powder
1 Tbsp minced garlic (or substitute for garlic powder)
1/2 tsp. pepper
1 14.5 oz can diced tomatoes
1 T. dried parsley
16 oz frozen spinach
6 oz fresh mozzarella balls
Combine ground beef, ground pork rinds, parmesan, egg, salt, Italian seasoning, onion powder, garlic, and pepper in a medium bowl. Form the meat mixture into 1.5 inch balls.
Heat 3 T olive oil in a large skillet over medium heat. Saute meatballs until browned on all sides.
Add tomatoes and spinach to the skillet, simmer for 10 minutes, stirring frequently.
Add fresh mozzarella and let heat until the cheese is melty.
Serve over roasted zucchini or cauliflower, or with a green salad.
