Banana Pudding Ingredients

  • Sweetener (erythritol) 3 tablespoons

  • Xanthan gum 1 teaspoon

  • Salt 1 pinch

  • Eggs (only yolk) 3

  • Vanilla extract 1 and half teaspoon

  • Heavy cream 1 and half cup

  • Banana slices


Preparation

  • Take a medium saucepan. Add sweetener, xanthan gum, and salt. Wisk all of them together

  • Now add the whipped cream into cooled pudding, or you can make layers of both.

  • Add banana slices on the top or in between the layers of the pudding and stiff cream.


Tips to Follow

  • Whisk the egg yolks before adding them to the mixture. It helps to get a better texture without cooking or curdling

  • Once the egg and sweetener are thoroughly combined, then slow down the moving process because heavy stirring separates them again. So, stir with light hands

  • It is a small amount of mixture that thicken up readily, so don't walk around while making pudding

  • Immediately remove the pan when it comes to the thickening stage

  • You can see the mixture leave the pan surface when it starts thickening, so take it as an indicator of the thickening process

  • Xanthan gum is added to get better consistency
