Kate’s love for hospitality began in her grandmother Catherine’s kitchen, where she learned that good food, a warm smile, and meaningful conversation could touch hearts from the inside out. Growing up in New Jersey as one of seven children, Kate was always surrounded by family and faith. She raised her two daughters, Erin and Shannon, and now delights in her five grandchildren, who fill her life with joy.
In 2004, a vacation to Pleasure Island changed everything. Kate discovered the Carolina Beach Pancake House and, guided by faith, made an offer. Just ten days later, it was hers. The first years were filled with hard work, prayer, and trust in God’s plan. Over time, Kate watched families grow—engagements, marriages, and children all celebrated here.
In 2022, Kate faced a life-changing health battle. After a long series of tests, doctors found a large tumor in her colon and biopsied dozens of lymph nodes. They gave little hope, but Kate turned to God. Through prayer, faith, and an overwhelming peace from the Holy Spirit, she faced the surgery with trust. After the procedure, the tumor was miraculously only stage two, and all 49 lymph nodes were clear. Kate never needed chemo or radiation, and she knew God had given her a second chance.
Today, Kate continues to serve with faith, love, and gratitude. From the Bibles on the tables to the “God’s Got This” pins worn by her team, Kate’s mission is simple: to feed people with love and make them happy from the inside out.
