White Steel
White Steel
White steel is made by pure Carbon Steel. It has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.
Blue Steel
Blue Steel
Blue steel is made by adding Chromium and Tungsten / Wolfram to White steel. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle.
