APPLICATION GUIDELINES
Eligibility : Must not be a Japanese national.
Theme : Japan–India Friendship 🇯🇵 🤝 🇮🇳
Number of Recipes and Rules: Participants are required to create a "5-item Japanese appetiser platter" incorporating all of the specified key ingredients.
Key Ingredients :
- At least one type of Japanese seafood or vegetable (Japan-sourced)
- Japanese seasonings (soy sauce, miso, vinegar, sake, mirin, etc.)
- Dashi (made with Japanese ingredients such as bonito or kombu; vegetarian/vegan-friendly options permitted)
- At least one Indian ingredient (use of spices permitted)
Contest Format & Rounds

📄 Document Screening – Evaluation Process : All submissions will undergo a document screening stage. The judges will evaluate your 5-item Japanese appetiser platter proposal based on the following:

Passion – Your demonstrated enthusiasm for Japanese cuisine
Concept – Creativity and coherence of the overall appetizer platter
Photograph Quality – Visual clarity and presentation in photos
Recipe – Use of ingredients, balance of flavors, and authenticity
Clarity of Cooking Process – Clear, logical, and replicable steps
3. Final Tournament: Held in Mumbai at Sheila Raheja Institute of Hotel Management(SRIHM) :

👨🍳 Competition Details
Finalists will be required to prepare 5 sets of the 5-item Japanese appetiser platter
(with the listed key ingredients) that was submitted during the document screening phase.
2 Main Plates:
1 for official photos
1 for display/presentation
3 Tasting Plates:
For the judging panel (one per judge)
💡 Note: All five appetizer items must be presented together and fit on a single tray measuring 28 cm x 40 cm (same as the screening requirement).
⏱️Cooking Time
120 minutes total for preparation and plating
Time management will be strictly monitored
To support participation, each finalist will receive:
🚕 Transportation Subsidy: Up to ₹20,000
🛒 Ingredient Reimbursement: Up to ₹10,000
🧾 Reimbursement will be provided upon submission of original receipts.

Born in Odaka Ward, Minami Soma City, Fukushima Prefecture, Chef Mitsutake Watanabe is a celebrated master of Japanese cuisine. With more than 20 years of culinary experience, he has contributed to promoting authentic Japanese gastronomy worldwide.

Owner & Head Chef of GINKGO. Conducted numerous Japanese cuisine workshops in India.

Chef HAL’s culinary journey was deeply shaped in his hometown of Kobe, Japan. His exceptional talent led him to represent Japanese Master Chefs at the prestigious World Gourmet Summit in Singapore (2010) and Abu Dhabi (2012). That same year, he was awarded the title of “Best Chef”, a recognition that paved the way for his first overseas restaurant, Shun, which opened in Singapore in 2015.
Through years of travel, learning, and immersion in diverse cultures, Chef HAL developed a distinctive fusion style. From these experiences, he created his signature cuisine, “Shin-Washoku” (New Japanese Cuisine) — a modern interpretation of Japanese dining that celebrates and elevates the natural flavours of ingredients.
Today, Chef HAL is widely recognized as a pioneer of Shin-Washoku, not only leading acclaimed restaurants around the world but also sharing his vision through television, magazines, and international culinary events.

Dates: Saturday, February 14 to Saturday, February 21, 2026
Location: Traditional Ryōtei in Japan (to be announced)
The organiser will cover the following expenses for the winner:
✅ Round-trip economy-class airfare from the nearest major airport in India to Japan
✅ Accommodation during the stay in Japan
✅ Placement and arrangement of the training program at the ryōtei
🥇Optional Certification Opportunity
The winner may also be eligible to take the Certification of Cooking Skills for Japanese Cuisine in Foreign Countries, a prestigious exam recognized by the Japanese Ministry of Agriculture, Forestry and Fisheries.
(Exam fee applies and is not included in the prize. Participation is optional and subject to conditions.)
