Stracciatella (a cheese produced from Italian buffalo milk)
Butter
Milk
Lemon
Balsamic vinegar sauce

Ingredients:
๐ฆ Shrimps (15 pcs)
๐ง Onion
๐พ White wine
๐ฅ Stracciatella (mozzarella)
๐ฅ Bacon in cube cut
Pasta
Olive oil

Clean the red shrimps, remove the tail and set the fin and carcass aside.
Cook carcass with oil and onion for about 30 minutes.
Cook the pasta separately and remove it al dente (hard).
Chop the carcass parts and sift through a colander with small holes and set aside the carcass gravy.
In the same pan, cook the tail meat with oil and bacon.
Pour the shrimp sauce into the pan with the shrimp tails.
Put the pasta in the pan and cook for 10 minutes.
Turn off the gas and add small chunks of mozzarella (stracciatella).
Enjoy with black pepper and raw olive oil.
