Preparation
Clean and cut your strawberries.
Place strawberries, sugar, and lemon juice into your instant pot, then stir. Let sit for 10 minutes.
Pressure cook on high for 1 minute. Natural Release
In a small bowl mix together cornstarch and water to create a slurry.
Remove the instant pot lid and stir in your slurry.
Turn on Saute mode, boil mixture until thickened.
Pour into a heat safe glass container. Allow to cool and then refrigerate for a few hours before serving.
The Strawberry Jam lasts for 3 weeks in the refrigerator. Store in an airtight container.
