Function: Adjusts amount of space between glyphs, generally to provide optically consistent spacing between glyphs. Although a well-designed typeface has consistent inter-glyph spacing overall, some glyph combinations require adjustment for improved legibility. In April 2022, Werner invited me for a visit and tour of some places around the Payottenland and Zenne Valley where farmers they work with are growing organic hops, wheat, and barley. We were accompanied by lambic fans Dave Atkins of the U.K. and Amy Fowler of the U.S. on a sunny spring day.

Spontaneous fermentation, patient maturation in oak barrels and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend etc.

Somewhere along the line, beer became a very regulated thing and depending on who you ask became a weapon against libido. In the 16th century the German Beer Purity Law came into effect and mandated that the only ingredients to be used for beer were water, barley, hops, and yeast. The question then is who was behind this law and how did it come to be passed? Some say that the Protestants of the time were very influential in this law and mandated hops to be used to lower libido among men.

According to the 1516 Bavarian law, the only ingredients that could be used in the production of beer were water, barley and hops.[2] The text does not mention yeast as an ingredient, although yeast was at the time knowingly used in the brewing process. It is likely that brewers of the time preferred to see yeast as a fixture of the brewing process. Yeast produced in one batch was commonly transferred to a subsequent batch, thus giving yeast a more permanent character in the brewing process. A full understanding of the chemical basis of yeast and the fermentation process did not come until much later.

The revised Vorlufiges Biergesetz (Provisional Beer Law) of 1993, which replaced the earlier regulations, is a slightly expanded version of the Reinheitsgebot, stipulating that only water, malted barley, hops and yeast be used for any bottom-fermented beer brewed in Germany. In addition, the law allows the use of powdered or ground hops and hop extracts, as well as stabilization and fining agents such as PVPP.
