In our latest pandemic, comfort baking and immunr boosting foods have taken the forefront. Many bakers, such as Michelle Lopez of Hummingbirdhigh, took this time to explore new recipies such as gluten-free, sourdough, and other "bucket list" food items that theyve always wanted to make. However, they also had to contend with a major factor in cooking - food shortages. As people began to flock to grocery stores to stock up in the midst of disruptions in the supply chain movement, certain goods became scarce. Many influential bakers took this oppurtunity to showcase different, scaled down recipes, such as eggless cookies or 2 serving size recipes. However, comfort baking wasn't the only baking style in the spotlight. Foods to boost immune health also shined, and many chimed in with their best soloutions. In this time period, food became a source of comfort and saftey in an otherwise tumultous world for many people.
