Who's Julien Royer? His impressive resume includes stints at Michel Bras in France, and Antonin Bonnet in London. After moving to Singapore, he managed the highly-acclaimed Jaan restaurant for many years. He then opened Odette, named after his grandmother, in late 2015.

What's the menu? Other than signature dishes such as Normandy brown crab with wasabi and Nashi pear and Kampot pepper-crusted porkeon, Royer's elegant touch can be found in plates of wild Atlantic Turbot with stuffed morel, Swiss chard and rosemary-smoked organic eggs with Iberico Chorizo.
This dining room: Odette's dining area is located in the National Gallery Singapore. It has soft pink pops against a cream background and grey walls. Dawn Ng, a Singaporean artist, designed the aesthetic. She also included original abstract collages of food photography.
Other projects Royer launched Louise in Hong Kong, his first venture outside of Singapore. This vibrant bistro earned its first Michelin star quickly for its cheffy take on casual country cooking. Its dishes include a Brittany Dover sole meunière and a winter vegetable tart with Parmesan butter and black truffle butter. Claudine, a French-style brasserie in Singapore's Dempsey hill, opened in 2022.
