We are a small family farm raising beef cattle and chickens. We typically have 10 momma cows on 50 acres. We mainly use our own hay that we cut and use local distributor for the supplemental feed and spent grain from a local brewery. The cows are well feed and taken care of. When we take a cow to butcher, here is what happens and cost breakdown.
The cow is weighed and tagged. That weight is called the live weight. Once humanely dispatched, it is aged over about 14 days which then creates the hanging weight of about 60%. The cow usually dresses out at about 35-40% becoming packaged meat. This percentage will increase if you get more bone in items.
We use H&R or Morgan’s for slaughter. We currently charge $1.85 a pound of the live weight, but this can fluctuate due to our costs. Then the butcher charges a percentage fee of $0.58 a pound plus fees.
So based on these 2 imaginary cows, this would be the approximate costs.

Our turkeys are free-ranged with supplemental feed. No antibiotics given. Feed is a local farm feed. We charge $3.00 per pound live weight. Birds will be weighed and final payment due upon turkey pickup/delivery. Fill out our form to be contacted. We are ordering our initial set of turkeys now which will make them between 28-35 lbs.
