[What is Yoshida Udon?]

Yoshida Udon is a local udon dish found around Fujiyoshida City, Yamanashi Prefecture. It is characterized by its chewy, firm noodles, and is often topped with cabbage and horse meat (and recently pork). Suridane (karami) is a hot condiment based on chili peppers that is an essential seasoning for Yoshida Udon.

"Yumori udon" from Fujiyoshida City, Yamanashi Prefecture is one way to eat Yoshida udon, a simple dish in which boiled udon is placed in a bowl and the boiling water (same as sobayu) is poured over it. It is generally seasoned with bonito flakes and soy sauce, and topped with seasonal boiled vegetables. Because it is simple, you can enjoy the original flavor and firmness of the udon. Recently, there are almost no restaurants offering this dish.
