According to Fortune Business Insights, the global fruit & vegetable ingredients market size was valued at USD 232.80 billion in 2025. The market is projected to grow from USD 247.15 billion in 2026 to USD 416.69 billion by 2034, exhibiting a CAGR of 6.75% during the forecast period of 2026-2034. Asia Pacific dominated the global market with a market share of 34.18% in 2025.
Fruit and vegetable ingredients are processed forms of fruits and vegetables used across food products, beverages, nutraceuticals, and cosmetic applications. These ingredients include concentrates, purees, powders, flakes, juices, pastes, and natural extracts. They provide flavor, color, texture, and nutritional functionality to finished products. Increasing consumer preference for clean-label products, plant-based foods, naturally sourced ingredients, functional foods, and convenience products is supporting the expansion of the market.
Food manufacturers are increasingly replacing synthetic additives with natural alternatives for color, flavor, and nutritional enhancement. The growing adoption of fruit concentrates, NFC bases, purees, powders, vegetable extracts, and other ingredient formats is creating opportunities across beverages, dairy products, bakery and confectionery, snacks, plant-based foods, and nutraceutical products.
The push toward clean-label reformulation is a major factor supporting market growth across beverages, dairy, bakery, snacks, confectionery, and plant-based foods. Manufacturers are increasingly using fruit concentrates, NFC bases, purees, powders, and vegetable extracts as alternatives to synthetic flavors, colors, and sweeteners. High-volume beverage applications are particularly important because fruit and vegetable ingredients provide consistent formulation characteristics for juices, smoothies, flavored waters, functional beverages, and dairy drinks.
Seasonal changes in raw materials, variations in crop quality, and processing complexities can affect the consistency and reliability of ingredient supplies. Weather conditions and geographic differences influence the availability, prices, colors, and flavors of raw materials. Purees, pulps, and NFC bases also require appropriate storage and hygienic handling to prevent spoilage and maintain quality. Oxidation can affect color and flavor stability, creating challenges related to product standardization and processing.
The growing need for natural color systems and customized low-sugar ingredient blends is creating higher-value opportunities. Manufacturers can develop customized solutions for low-sugar beverages, natural color replacements, dairy fruit mixes, smoothie bases, bakery fillings, snack seasonings, and nutrition powders. Vegetable-derived colors from beetroot, carrot, pumpkin, and spinach extracts offer potential as food manufacturers reduce their reliance on artificial colors. Fruit-based sweetening and acidity-balancing systems can also support sugar-reduction initiatives while maintaining desired taste characteristics.
Premium products, including freeze-dried fruit powders, exotic fruit purees, and clean-label ingredients for functional foods and supplements, also represent areas of market opportunity.
The fruit & vegetable ingredients market is highly fragmented, with companies competing through processing capabilities, ingredient features, and customized solutions. Market participants are focusing on concentrates, powders, purees, natural color systems, color stability, flavor preservation, sugar reduction, and shelf-life enhancement. Freeze-drying and low-temperature processing are also important strategies for high-quality nutritional and functional products.
